A mindful evening should never feel like a compromise. Our non-alcoholic elixirs are built with the same seriousness, structure, and depth as any pour from our cellar.

For too long, the alcohol-free option meant something sweet, simple, and apologetic. We reject that entirely. A great pairing—with or without alcohol—needs acidity, bitterness, tannin, and length. It needs to argue with the food and then reconcile with it. So we build our elixirs the way a chef builds a sauce: in layers, over time, with patience.

Building complexity without alcohol

We steep, ferment, and infuse. Verjus and aged vinegars provide the backbone of acidity. Steeped teas and barks lend the grip that tannin would otherwise give. Toasted spices and roots build the mid-palate weight that makes a drink feel considered rather than thin. The result is a glass with genuine architecture.

Clarity of mind should be rewarded with complexity in the glass, never punished with simplicity.

Every elixir is designed against a specific course, shifting through the evening exactly as our wine pairings do. Guests who choose the mindful path are not sitting out the experience. They are having a different, equally complete version of it.
